I recently made a trip to Birkdale Village to T1 Tapas, a new restaurant in the area. I met a cool bartender named Scott who took very good care of me. The theme of the unique restaurant is "eat drink connect".

Scott went over in detail some of the history of the place while there was a "bubbly tasting" going on. They have events going on each week, including a wine tasting every Wednesday. Live music this friday too. Here are some interesting things to know about it:
- It's not a franchise
- It has a couple different owners
- It's a new concept
- You can order your meal from a touch screen menu
- TV screens and MP3 Plug-ins allow you to play your own videos, tunes, etc. at your table
- The menu selections change bi-monthly and so does the wine selection
- The menu is based on organic and earth selections of foods from local farmer's markets
